Almond Butter Protein Breakfast Blondies

High-protein, low-sugar treat that works as a snack or on-the-go breakfast.

Ingredients (Makes 8 blondies):

  • ½ cup almond butter

  • ¼ cup unsweetened applesauce

  • 1 scoop vanilla protein powder

  • 1 large egg

  • 2 tbsp almond flour

  • 2 tbsp maple syrup or monk fruit syrup

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • Optional: 2 tbsp dark chocolate chips or chopped walnuts, or peanuts

Instructions:

  1. Preheat oven to 350°F (175°C) and line a small square baking dish with parchment.

  2. Mix all ingredients in a bowl until a smooth batter forms.

  3. Pour into baking dish and smooth the top.

  4. Bake for 15–18 minutes or until golden and set in the center.

  5. Let cool, slice into 8 bars.

Protein per blondie: ~10–12g
