Almond Butter Protein Breakfast Blondies
High-protein, low-sugar treat that works as a snack or on-the-go breakfast.
Ingredients (Makes 8 blondies):

½ cup almond butter

¼ cup unsweetened applesauce

1 scoop vanilla protein powder

1 large egg
-
2 tbsp almond flour
-
2 tbsp maple syrup or monk fruit syrup

1 tsp baking powder
-
½ tsp cinnamon
-
Optional: 2 tbsp dark chocolate chips or chopped walnuts, or peanuts
Instructions:

Preheat oven to 350°F (175°C) and line a small square baking dish with parchment.

Mix all ingredients in a bowl until a smooth batter forms.

Pour into baking dish and smooth the top.

Bake for 15–18 minutes or until golden and set in the center.

Let cool, slice into 8 bars.
