Fresh Mediterranean Lentil Protein Bowl
Plant-forward, gut-friendly, and packed with fiber and protein.
Ingredients (Serves 2):

1 cup cooked green or black lentils

½ cup chopped cucumber

½ cup cherry tomatoes, halved

¼ cup red onion, thinly sliced

2 tbsp kalamata olives, chopped
-
¼ cup crumbled feta cheese
-
1 tbsp olive oil
-
1 tbsp lemon juice
-
1 tsp oregano
-
Salt and pepper to taste

Optional: Add grilled chicken or a soft-boiled egg for extra protein
Instructions:

In a bowl, combine lentils, cucumber, tomatoes, onion, olives, and feta.

In a small dish, whisk together olive oil, lemon juice, oregano, salt, and pepper.

Pour dressing over the bowl and toss gently.

Serve cold or room temperature.
