Mediterranean Lentil Protein Bowl

 Fresh Mediterranean Lentil Protein Bowl

Plant-forward, gut-friendly, and packed with fiber and protein.

Ingredients (Serves 2):

  • 1 cup cooked green or black lentils

  • ½ cup chopped cucumber

  • ½ cup cherry tomatoes, halved

  • ¼ cup red onion, thinly sliced

  • 2 tbsp kalamata olives, chopped

  • ¼ cup crumbled feta cheese

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp oregano

  • Salt and pepper to taste

  • Optional: Add grilled chicken or a soft-boiled egg for extra protein

Instructions:

  1. In a bowl, combine lentils, cucumber, tomatoes, onion, olives, and feta.

  2. In a small dish, whisk together olive oil, lemon juice, oregano, salt, and pepper.

  3. Pour dressing over the bowl and toss gently.

  4. Serve cold or room temperature.
